If you’re short on time, as I often am (not too often though), these are the perfect additon to the coffee when you’re having some friends over. Or just to snack on after the family dinner. These coconut macaroons are too easy and you can make them in any sizes and shapes. I chose to put a little twist to them and added some Limoncello and lime, which turned out to be the best decition ever made(!).
For about 12 of these you need:
- 50gr butter
- 300gr shredded coconut
- 2 eggs
- 100gr sugar
- The peel of 1 lime + the juice
- 2tbs Limoncello
Put the oven on 175 degrees celsius and melt the butter. Combine all the ingredient then let set in the fridge for 10-15 minutes. Drop the batter onto parchment paper (in pans of course) and bake in the oven until golden brown. DELISH!
